Description
Glazed Coffee Beignets made with brewed dark coffee and finished in a smooth coffee glaze for a bold, bakery-style pastry.

- 3/4 cup ground dark coffee
- 3 cups cold water
- 1/3 cup granulated sugar
- 1 envelope active dry yeast
- 7 1/4 cups all-purpose flour
- 1 1/2 cups warm half and half (100–110°F)
- 2 large eggs, beaten
- 1/4 cup butter, melted
- 1 teaspoon salt
- Vegetable oil, for frying
- 4 cups confectioners’ sugar
- 1/2 cup brewed coffee
- 1 teaspoon vanilla extract
Instructions
- Brew coffee using dark grounds and cold water; reserve 1/2 cup for the glaze.
- Combine sugar and yeast in a mixer bowl; add warm coffee and let stand until foamy.
- Beat in half the flour, half and half, eggs, butter, and salt.
- Gradually add remaining flour until a soft dough forms.
- Knead briefly, then cover and let rise in a warm place for 1 hour.
- Roll dough to 1/4-inch thickness and cut into 1 1/2-inch squares.
- Heat oil to 350°F and fry dough in batches until golden on both sides.
- Drain on racks, then dip warm beignets into coffee glaze and let excess drip off.
Notes
- Makes about 36 beignets.
- Best served warm.
- Glaze sets quickly as beignets cool.
