Ingredients
Scale
- 1 cup (230g) unsalted butter
- 8 oz (225g) dark chocolate (70% cocoa or higher), chopped
- 1 ½ cups (300g) granulated sugar
- ½ cup (100g) brown sugar, packed
- 4 large eggs, room temperature
- 1 tsp pure vanilla extract
- ¾ cup (95g) all-purpose flour (or almond flour for gluten-free)
- ¼ cup (25g) Dutch-processed cocoa powder
- ½ tsp sea salt
- Optional add-ins: ½ cup (50g) toasted nuts, dried cherries, or a sprinkle of flaky sea salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- Melt the butter and dark chocolate together in a heatproof bowl set over a pot of simmering water (double boiler method). Stir until smooth. Remove from heat and let cool slightly.
- Whisk in granulated and brown sugars until fully dissolved and the mixture is glossy.
- Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- Sift together the flour, cocoa powder, and salt in a separate bowl. Gradually fold this into the wet ingredients using a spatula. Mix just until combined; do not overmix.
- If adding nuts or fruits, gently fold them into the batter. Pour the batter into the prepared pan and spread evenly.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Avoid overbaking for a fudgier texture.
- Allow the brownies to cool in the pan for at least 15 minutes. Lift them out using the parchment overhang and transfer to a wire rack to cool completely before slicing.
Notes
- Use High-Quality Chocolate: The flavor of gourmet brownies depends heavily on the quality of the chocolate. Choose dark chocolate with at least 70% cocoa content for a rich and bold taste.
- Avoid Overmixing the Batter: Mix the ingredients until just combined to maintain a tender, fudgy texture. Overmixing can incorporate too much air, leading to a dense or cakey brownie.
- Do Not Overbake: Check the brownies a few minutes before the suggested bake time. A toothpick inserted in the center should come out with a few moist crumbs, not completely dry. This ensures a perfectly fudgy center.
