Description
A timeless classic, Granny Cake combines simple ingredients to create a moist, sweet, and nostalgic dessert. Packed with pineapple, crunchy nuts, and a rich glaze, it’s a slice of pure comfort.
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- ¼ tsp salt
- 2 large eggs
- 1 can (20 oz) crushed pineapple (with juice)
- ½ cup chopped pecans (optional)
- ½ cup brown sugar
- ½ cup evaporated milk
- ¼ cup unsalted butter
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
- Mix dry ingredients: In a large bowl, combine flour, sugar, baking soda, and salt.
- Add wet ingredients: Add eggs and pineapple (with juice). Stir until well combined.
- Incorporate nuts: Fold in chopped pecans if using.
- Bake: Pour the batter into the prepared pan and bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the glaze: In a saucepan, combine evaporated milk, butter, and brown sugar. Bring to a gentle simmer, stirring constantly until slightly thickened. Remove from heat and stir in vanilla.
- Glaze the cake: Once the cake is baked and slightly cooled, poke small holes across the top with a fork. Pour the warm glaze evenly over the cake.
- Let it soak: Allow the cake to absorb the glaze before serving.
Notes
1️⃣ Use the Pineapple Juice: Always include the juice from the crushed pineapple in the batter. It adds essential moisture and flavor, making the cake irresistibly soft and tender.
2️⃣ Don’t Skip the Glaze: The brown sugar and evaporated milk glaze is key to achieving the signature rich, caramel-like finish. Pour it while the cake is still warm to ensure maximum absorption.
3️⃣ Let It Rest Before Serving: After adding the glaze, give the cake time to soak and cool. This ensures every bite is perfectly moist and flavorful.
