Description

  • 1 cup granulated sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • 1 can (20 oz) crushed pineapple (with juice)
  • ½ cup chopped pecans (optional)
  • ½ cup brown sugar
  • ½ cup evaporated milk
  • ¼ cup unsalted butter
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
  • Mix dry ingredients: In a large bowl, combine flour, sugar, baking soda, and salt.
  • Add wet ingredients: Add eggs and pineapple (with juice). Stir until well combined.
  • Incorporate nuts: Fold in chopped pecans if using.
  • Bake: Pour the batter into the prepared pan and bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Prepare the glaze: In a saucepan, combine evaporated milk, butter, and brown sugar. Bring to a gentle simmer, stirring constantly until slightly thickened. Remove from heat and stir in vanilla.
  • Glaze the cake: Once the cake is baked and slightly cooled, poke small holes across the top with a fork. Pour the warm glaze evenly over the cake.
  • Let it soak: Allow the cake to absorb the glaze before serving.

Notes

1️⃣ Use the Pineapple Juice: Always include the juice from the crushed pineapple in the batter. It adds essential moisture and flavor, making the cake irresistibly soft and tender.
