Description

Easy Greek Pasta Salad is a refreshing, make-ahead side dish filled with pasta, veggies, olives, and feta tossed in zesty Greek dressing.


Ingredients

16 ounces rotini pasta

¾ English cucumber, diced

1 pint grape tomatoes, halved

1 red or orange bell pepper, diced

½ cup sliced pitted olives

½ cup crumbled feta cheese

⅓ cup diced red onion

1 cup Greek dressing or homemade mix:

¼ cup red wine vinegar

⅓ cup olive oil

½ tsp garlic powder

1 tsp dried oregano

Salt and pepper to taste


Instructions

1. Whisk together all dressing ingredients.

2. Cook pasta al dente and rinse under cold water.

3. Combine all ingredients in a large bowl.

4. Add dressing and toss until evenly coated.

5. Refrigerate for at least 2 hours before serving.

Notes

This salad tastes even better after chilling overnight. Add grilled chicken or chickpeas for extra protein.
