This grilled chili peach chicken is a quick and flavorful dish combining sweet peach preserves with spicy chili garlic sauce for a perfect grilled meal.

Ingredients

Scale
  • 1 ½ cups peach preserves
  • ¼ cup low-sodium soy sauce
  • ⅓ cup chili garlic sauce
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice or apple cider vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2.5 to 3 pounds boneless skinless chicken breasts
  • Fresh cilantro (optional)
  • Fresh peppers (optional)

Instructions

  1. Whisk together peach preserves, soy sauce, chili garlic sauce, olive oil, lemon juice, salt, and pepper.
  2. Add chicken to a zip-top bag and pour in most of the marinade.
  3. Seal and coat evenly, then refrigerate for at least 1 hour.
  4. Preheat grill to medium-high heat.
  5. Grill chicken for about 10 minutes, flipping occasionally.
  6. Brush reserved marinade on chicken while cooking.
  7. Cook until chicken is fully done and slightly caramelized.
  8. Garnish with cilantro and peppers and serve immediately.

Notes

  1. Marinating enhances flavor significantly.
  2. Do not overcook to avoid dryness.
  3. Adjust spice level by modifying chili garlic sauce.
