Grilled Mango Pineapple Chicken is a quick tropical recipe featuring juicy grilled chicken, sweet mango and pineapple, and a bright citrus marinade perfect for summer meals.
Ingredients
1 ½ pounds thin-sliced boneless skinless chicken breasts
8 ounces mango-pineapple salsa
⅓ cup lime juice
¼ cup olive oil
½ teaspoon freshly ground black pepper
1 large yellow bell pepper, sliced into 1/2-inch strips
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
4 ounces mango-pineapple salsa (for garnish)
½ cup diced mango
⅓ cup pineapple tidbits
2 to 4 tablespoons fresh cilantro
Instructions
Add chicken, salsa, lime juice, olive oil, and black pepper to a zip-top bag and mix well to coat.
Refrigerate and marinate for at least 30 minutes or overnight.
Preheat grill to medium-high heat and lightly oil grates.
Place bell peppers in a grill basket, drizzle with olive oil, and season with salt and pepper.
Grill chicken for 4 to 5 minutes on the first side with lid closed.
Flip chicken and cook another 4 to 5 minutes until fully cooked.
Stir peppers occasionally while grilling until tender and slightly charred.
Transfer chicken to a serving platter and top with salsa, mango, pineapple, and cilantro before serving.

Store leftovers in an airtight container in the refrigerator for up to 5 days.
