Description
A light and refreshing summer salad made with grilled peaches, fresh blueberries, mixed greens, and a simple balsamic dressing.

- 4 ripe peaches, halved and pitted
- 1 cup fresh blueberries
- 4 cups mixed greens
- 1/4 cup crumbled feta cheese
- 1/4 cup toasted pecans or walnuts
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat and lightly oil the grates.
- Brush the cut sides of the peaches with olive oil.
- Grill the peaches cut-side down for 3 to 4 minutes until grill marks appear.
- Remove peaches from the grill, cool slightly, and slice into wedges.
- Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Add mixed greens to a large bowl and top with grilled peaches and blueberries.
- Sprinkle with feta cheese and toasted nuts.
- Drizzle dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
- Use peaches that are ripe but firm for best grilling results.
- Store components separately if preparing ahead.
- Add dressing just before serving to keep greens crisp.
