Description
A smoky grilled romaine Caesar salad with charred lettuce, grilled lemon, crispy bread, and rich homemade dressing.

- 2 hearts of romaine, sliced in half lengthwise
- 2 lemons, cut in half
- 1/2 baguette, sliced into 1/4-inch pieces
- extra virgin olive oil
- 2 anchovies
- 2 garlic cloves
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3 tablespoons grated parmesan cheese
- 1/4 cup grilled lemon juice
- 2 egg yolks
- 1/2 teaspoon Dijon mustard
- 1/2 cup extra virgin olive oil

Instructions
- Preheat grill to 400°F using a two-zone method
- Lightly brush baguette slices with olive oil
- Place romaine, lemons, and bread over direct heat
- Grill for about 2 minutes per side, turning frequently
- Remove bread when toasted and crisp
- Remove lemons when charred
- Remove romaine when lightly charred but still firm
- Blend anchovies, garlic, salt, pepper, and parmesan into a paste
- Add grilled lemon juice, egg yolks, Dijon mustard, and olive oil
- Blend until smooth and emulsified
- Assemble salad with grilled romaine, dressing, bread, and toppings
Notes
- Do not overcook the romaine or it will become too soft
- Dry lettuce before grilling for better charring
- Use fresh grilled lemon juice for best flavor
- Serve immediately while warm for best texture
