Description

A healthy grilled shrimp bowl with avocado, fresh corn salsa, and creamy garlic sauce. This easy shrimp bowl is a quick seafood dish perfect for lunch or dinner and ready in just 25 minutes.


Ingredients

  • 1 lb large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional
  • 1 cup frozen corn thawed
  • 1/2 cup red onion diced
  • 1/4 cup cilantro chopped
  • 1 jalapeño seeded and minced optional
  • 1 lime juiced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon cilantro chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado sliced
  • Sesame seeds for garnish
  • Green onions chopped for garnish

Instructions

  1. In a bowl combine shrimp olive oil paprika garlic powder salt black pepper and cayenne pepper then toss until shrimp are coated
  2. In another bowl mix corn red onion cilantro jalapeño lime juice and salt then gently stir and set aside to form the corn salsa
  3. Heat a grill pan over medium heat then grill shrimp for 2 to 3 minutes per side until pink and cooked through
  4. In a small bowl whisk mayonnaise sour cream cilantro lemon juice minced garlic salt and black pepper to make the creamy garlic sauce
  5. Divide corn salsa between bowls then top with grilled shrimp avocado slices drizzle with creamy garlic sauce and garnish with sesame seeds and chopped green onions

Notes

  1. Add extra cayenne pepper or red pepper flakes to increase the heat
  2. Serve the bowl with cooked rice or quinoa for a more filling meal
  3. Fresh lime juice gives the corn salsa brighter flavor
