A healthy grilled shrimp bowl with avocado, fresh corn salsa, and creamy garlic sauce. This easy shrimp bowl is a quick seafood dish perfect for lunch or dinner and ready in just 25 minutes.

- 1 lb large shrimp peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper optional
- 1 cup frozen corn thawed
- 1/2 cup red onion diced
- 1/4 cup cilantro chopped
- 1 jalapeño seeded and minced optional
- 1 lime juiced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon cilantro chopped
- 1 tablespoon lemon juice
- 1 clove garlic minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado sliced
- Sesame seeds for garnish
- Green onions chopped for garnish
Instructions
- In a bowl combine shrimp olive oil paprika garlic powder salt black pepper and cayenne pepper then toss until shrimp are coated
- In another bowl mix corn red onion cilantro jalapeño lime juice and salt then gently stir and set aside to form the corn salsa
- Heat a grill pan over medium heat then grill shrimp for 2 to 3 minutes per side until pink and cooked through
- In a small bowl whisk mayonnaise sour cream cilantro lemon juice minced garlic salt and black pepper to make the creamy garlic sauce
- Divide corn salsa between bowls then top with grilled shrimp avocado slices drizzle with creamy garlic sauce and garnish with sesame seeds and chopped green onions
Notes
- Add extra cayenne pepper or red pepper flakes to increase the heat
- Serve the bowl with cooked rice or quinoa for a more filling meal
- Fresh lime juice gives the corn salsa brighter flavor
