Description

This Grilled Vegetables Marinade recipe creates a flavorful and healthy summer side dish with perfectly grilled vegetables.


Ingredients

Scale
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 3 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound carrots
  • 1 pound asparagus
  • 2 zucchini
  • 2 yellow squash
  • 1 red bell pepper

Instructions

  1. Whisk together all marinade ingredients until smooth
  2. Slice vegetables into long strips
  3. Place vegetables on baking sheet and pour marinade over
  4. Toss to coat evenly
  5. Marinate for at least 30 minutes
  6. Preheat grill to 350°F
  7. Grill carrots first for 3-4 minutes
  8. Add remaining vegetables and grill 8-10 minutes, flipping once
  9. Remove and serve warm

  1. Cut vegetables evenly for consistent cooking
  2. Do not overcrowd the grill
