Description
This easy grilled zucchini recipe is topped with goat cheese, basil, and honey for a simple sweet and savory summer side dish.
Ingredients

- 5 medium zucchinis
- Salt
- 1 tablespoon olive oil or avocado oil
- 1/3 cup goat cheese, crumbled
- 2 tablespoons fresh basil, chopped
- 1.5 tablespoons honey
- Salt and pepper to taste
Instructions
- Remove ends from zucchini and slice lengthwise into 1/2 inch pieces
- Place slices on a board, sprinkle with salt, and let sit for 20 minutes
- Pat zucchini dry with a clean towel or paper towel
- Heat grill or grill pan to medium high heat
- Brush oil on both sides of zucchini slices
- Grill zucchini for 10 to 15 minutes, flipping halfway, until tender with grill marks
- Transfer zucchini to a serving plate
- Top with goat cheese and chopped basil
- Drizzle honey over the top and season with salt and pepper

- Best served immediately after grilling
- Store leftovers in an airtight container in the fridge for up to 3 days
