Description

This easy grilled zucchini recipe is topped with goat cheese, basil, and honey for a simple sweet and savory summer side dish.


Ingredients

Scale
  • 5 medium zucchinis
  • Salt
  • 1 tablespoon olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 tablespoons fresh basil, chopped
  • 1.5 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. Remove ends from zucchini and slice lengthwise into 1/2 inch pieces
  2. Place slices on a board, sprinkle with salt, and let sit for 20 minutes
  3. Pat zucchini dry with a clean towel or paper towel
  4. Heat grill or grill pan to medium high heat
  5. Brush oil on both sides of zucchini slices
  6. Grill zucchini for 10 to 15 minutes, flipping halfway, until tender with grill marks
  7. Transfer zucchini to a serving plate
  8. Top with goat cheese and chopped basil
  9. Drizzle honey over the top and season with salt and pepper
