Description

Perfectly charred zucchini slices topped with tangy goat cheese, fresh basil, and honey. An easy summer side dish ready in 40 minutes.


Ingredients

Scale
  • 5 medium zucchinis
  • Salt
  • 1 tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 tbsp fresh basil, chopped
  • 1.5 tbsp honey
  • Salt and black pepper to taste

Instructions

  1. Trim zucchini ends and slice lengthwise into 1/2-inch strips.
  2. Sprinkle generously with salt and let sit for 20 minutes.
  3. Pat zucchini dry with paper towels.
  4. Preheat grill or grill pan to medium-high heat.
  5. Brush both sides with oil.
  6. Grill for 10-15 minutes, flipping halfway through.
  7. Transfer to a serving platter.
  8. Top with goat cheese and basil.
  9. Drizzle with honey.
  10. Season with salt and pepper and serve.

Notes

  1. Best served immediately.
  2. Store leftovers in an airtight container for up to 3 days.
  3. Great served cold in salads, sandwiches, or pasta.
