Description
Perfectly charred zucchini slices topped with tangy goat cheese, fresh basil, and honey. An easy summer side dish ready in 40 minutes.
Ingredients

- 5 medium zucchinis
- Salt
- 1 tbsp olive oil or avocado oil
- 1/3 cup goat cheese, crumbled
- 2 tbsp fresh basil, chopped
- 1.5 tbsp honey
- Salt and black pepper to taste
Instructions
- Trim zucchini ends and slice lengthwise into 1/2-inch strips.
- Sprinkle generously with salt and let sit for 20 minutes.
- Pat zucchini dry with paper towels.
- Preheat grill or grill pan to medium-high heat.
- Brush both sides with oil.
- Grill for 10-15 minutes, flipping halfway through.
- Transfer to a serving platter.
- Top with goat cheese and basil.
- Drizzle with honey.
- Season with salt and pepper and serve.

- Best served immediately.
- Store leftovers in an airtight container for up to 3 days.
- Great served cold in salads, sandwiches, or pasta.
