- 4 medium zucchinis halved lengthwise and scooped out
- 1 pound ground beef
- 1 small onion diced
- 2 cloves garlic minced
- 1 cup tomato sauce
- 1 cup shredded cheese
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and prepare zucchini by slicing in half and scooping out the center.
- Brush zucchini halves with olive oil and pre-bake for 5–7 minutes.
- Heat olive oil in a skillet and sauté diced onion until soft.
- Add garlic and cook for 30 seconds.
- Add ground beef and cook until browned while breaking it apart.
- Drain excess fat and stir in tomato sauce, Italian seasoning, paprika, salt, and pepper.
- Simmer mixture for 5 minutes.
- Fill zucchini boats with the beef mixture.
- Top with shredded cheese.
- Bake for 15 minutes until cheese melts and becomes bubbly.
- Serve warm with fresh herbs if desired.

- Pre-baking the zucchini prevents them from staying too firm.
