Description
Haitian Beignets are sweet banana fritters made with warm spices and fried until golden, offering a classic Caribbean dessert with a soft center and crisp edges.
Ingredients

- 3 ripe bananas, mashed
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon granulated sugar
- 1 large egg
- 12 fl oz evaporated milk or water
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon kosher salt
- Oil for frying
- Sugar for dusting
Instructions
- Mash the bananas until completely smooth.
- Add sugar, egg, milk, salt, baking soda, spices, vanilla, and almond extract, then mix well.
- Fold in the flour until a thick but pourable batter forms.
- Heat oil to 325–350°F in a large frying pan.
- Scoop batter into the oil in batches.
- Fry for about 2 minutes per side until golden.
- Remove and drain on paper towels.
- Dust with sugar and serve warm.
Notes
- Use very ripe bananas for best flavor.
- Keep oil temperature between 325°F and 350°F.
- Drain well on paper towels to avoid excess oil.
