Ingredients
- 6–8 medium Hatch green chiles (roasted, peeled, and seeded)
- 5–6 tomatillos (husked and roasted)
- 1 medium onion (chopped)
- 2 garlic cloves (peeled)
- 1/2 cup fresh cilantro
- Juice of 1 lime
- Salt to taste
Instructions
- Roast the Chiles: Roast Hatch green chiles on a grill, stovetop, or oven until blistered. Place in a bowl, cover with a towel, and let sit for 10 minutes. Peel, remove stems and seeds.
- Roast Tomatillos: Husk and rinse tomatillos. Roast them in a skillet or broiler until softened and charred.
- Blend Ingredients: In a blender, combine roasted chiles, tomatillos, onion, garlic, cilantro, lime juice, and a pinch of salt. Blend until smooth or slightly chunky, depending on preference.
- Taste and Adjust: Adjust lime juice, cilantro, or salt as needed.
- Serve or Store: Enjoy immediately or store in an airtight container in the fridge for up to a week.
