Juicy grilled chicken marinated in a sweet and savory sauce served with caramelized pineapple for a tropical inspired dinner.
Ingredients

- 1 1/2 pounds thin sliced boneless skinless chicken breasts
- 1/2 cup ketchup
- 1/4 cup reduced sodium soy sauce
- 1/4 cup light brown sugar packed
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon ground ginger
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 fresh pineapple cleaned cored and sliced into spears
- thinly sliced green onions optional
Instructions
- Add chicken, ketchup, soy sauce, brown sugar, olive oil, lemon juice, ginger, salt, and pepper to a large zip bag and coat evenly
- Marinate chicken in the refrigerator for at least 30 minutes
- Preheat grill to medium high heat and lightly oil the grates
- Place chicken on the grill and dip pineapple spears into marinade then place on grill
- Grill chicken for 5 minutes then flip and cook another 4 to 5 minutes until cooked through
- Rotate pineapple every 2 to 3 minutes until grill marks appear on all sides
- Garnish with green onions and serve immediately
Notes
- Chicken and pineapple keep refrigerated in an airtight container for up to 5 days
- Use a thermometer to cook chicken to 165°F for best results
