Description

Tender pork ribs cook slowly with pineapple, barbecue sauce, soy sauce, brown sugar, garlic, and ginger before receiving a thick, glossy Hawaiian-inspired glaze.


Ingredients

  • 2 pounds pork ribs, baby back or spare ribs
  • 1 cup diced pineapple, fresh or canned and drained
  • 1/2 cup barbecue sauce
  • 1/4 cup soy sauce
  • 3 tablespoons packed brown sugar
  • 2 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon ground black pepper, or to taste
  • Sliced green onions for garnish, optional
  • Crushed red pepper flakes, optional

Instructions

  1. Pat the ribs dry, remove the membrane from the back, and cut the rack into two- or three-bone portions.
  2. Season the ribs on both sides with salt and black pepper.
  3. Whisk the barbecue sauce, soy sauce, brown sugar, garlic, and ginger in a medium bowl.
  4. Pour half of the sauce into the slow cooker and add half of the diced pineapple.
  5. Arrange the ribs in the slow cooker, then pour the remaining sauce over them and add the remaining pineapple.
  6. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the meat becomes tender.
  7. Transfer the cooked ribs to a platter.
  8. Pour the cooking liquid into a saucepan and skim away excess fat.
  9. Mix the cornstarch with the cold water, then whisk the slurry into the sauce.
  10. Cook the sauce over medium heat for 3 to 5 minutes, stirring until thick and glossy.
  11. Spoon the glaze over the ribs.
  12. Broil the glazed ribs for 2 to 4 minutes for caramelized edges, if desired.
  13. Garnish with sliced green onions and serve hot.

Notes

  1. Remove the rib membrane for a more tender result.
  2. Brown the ribs in a skillet before slow cooking for deeper flavor.
  3. Add crushed red pepper flakes or sriracha for extra heat.
  4. Drain canned pineapple well so the sauce does not become too sweet.
  5. Store leftovers with sauce in an airtight container for up to 4 days.
