Description

Healthy Apple Nachos feature crisp apple slices drizzled with creamy natural nut butter and topped with dairy-free chocolate chips, shredded coconut, slivered almonds, and cinnamon. This colorful vegan snack takes only five minutes to prepare.


Ingredients

  • 2 crisp apples of choice
  • 1 tablespoon lemon juice
  • 1/4 to 1/3 cup natural peanut butter, almond butter, or sunflower seed butter
  • 1 small handful dairy-free mini chocolate chips
  • 1 small handful unsweetened shredded coconut
  • 1 small handful slivered almonds, optional
  • 1 light sprinkle ground cinnamon
  • Hemp hearts, optional
  • Cacao nibs, optional
  • Raisins or currants, optional
  • Ground cardamom, optional
  • Pure maple syrup, optional

Instructions

  1. Wash and dry the apples thoroughly.
  2. Cut each apple into quarters and remove the cores, seeds, stems, and blossom ends.
  3. Place each apple quarter flat-side down and cut it into 1/4-inch slices.
  4. Transfer the apple slices to a bowl, add the lemon juice, and toss gently to coat.
  5. Place the nut butter in a microwave-safe bowl and warm it for 20 to 30 seconds, then stir until smooth and drizzable.
  6. Arrange the apple slices in a wide circle around the outside of a serving plate.
  7. Add a second overlapping layer of apple slices toward the center of the plate.
  8. Drizzle the warm nut butter over the apples in circles or zigzags.
  9. Scatter the chocolate chips, shredded coconut, slivered almonds, and cinnamon evenly over the apples.
  10. Add any optional hemp hearts, cacao nibs, raisins, currants, cardamom, or maple syrup.
  11. Serve immediately while the apples remain cold and crisp.

Notes

  1. Use one sweet red apple and one tart green apple for a colorful sweet-and-tart combination.
  2. Choose dairy-free chocolate chips to keep the recipe vegan.
  3. Use sunflower seed butter and omit the almonds for a nut-free variation.
  4. For a raw variation, use raw nut butter, cacao nibs, and unsweetened shredded coconut.
  5. Store sliced apples separately from the nut butter and toppings when preparing the recipe ahead.
  6. Toss apple slices with lemon juice to slow browning.
