Description

These healthy vegan lentil sloppy joes are a plant based twist on the classic sandwich, made with simple pantry staples and packed with flavor and protein.


Ingredients

Scale
  • 1 teaspoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, diced
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • 1 cup dry green lentils
  • 2 cups water
  • 1 tablespoon ketchup
  • 1 tablespoon maple syrup
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon soy sauce or gluten-free tamari
  • 3 tablespoons tomato paste
  • 4 whole wheat buns or gluten-free buns
  • Jalapeño or hot sauce for topping (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
  3. Stir in the paprika, chili powder, cumin, and salt and cook for 2 minutes.
  4. Add the lentils and water and bring to a boil.
  5. Reduce to a simmer and cook for 25 to 30 minutes until lentils are tender and liquid is absorbed.
  6. Whisk together ketchup, maple syrup, apple cider vinegar, soy sauce, and tomato paste.
  7. Add the sauce to the lentils and cook over low heat until thick and fully coated.
  8. Spoon the lentil mixture onto buns and add desired toppings.
