Description

A healthy Mediterranean steak bowl with grilled sirloin steak, fresh vegetables, grains, tzatziki sauce, and lemon vinaigrette.


Ingredients

Scale
  • 1 pound sirloin steak
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked brown rice or quinoa
  • 1 cup roasted chickpeas
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ½ red onion sliced
  • ½ cup kalamata olives
  • ⅓ cup feta cheese crumbled
  • ¼ cup fresh parsley or dill
  • 1 cup Greek yogurt
  • ½ cucumber grated
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1 tablespoon fresh dill
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • ½ teaspoon oregano
  • salt and pepper

Instructions

  1. Mix olive oil garlic lemon juice oregano thyme salt and pepper to create the steak marinade
  2. Coat the steak with marinade and let it rest for 30 minutes
  3. Heat a skillet and cook the steak for 4 to 5 minutes per side
  4. Rest the steak for 5 minutes then slice thinly
  5. Mix Greek yogurt grated cucumber lemon juice garlic dill salt and pepper to make tzatziki
  6. Whisk olive oil lemon juice honey garlic oregano salt and pepper to make vinaigrette
  7. Cook grains according to package instructions
  8. Prepare vegetables by chopping tomatoes cucumber onion and herbs
  9. Assemble bowls with grains sliced steak vegetables olives chickpeas and feta
  10. Top with tzatziki sauce and drizzle with lemon vinaigrette

Notes

  1. Allow the steak to rest before slicing for juicier meat
  2. Marinate steak longer for deeper flavor
  3. Use cauliflower rice instead of grains for a low carb version
