Description

Healthy Zucchini Brownies are rich, fudgy, and secretly packed with zucchini for moisture and texture. This low-calorie dessert delivers deep chocolate flavor while staying light and satisfying.


Ingredients

  • 2 cups finely grated zucchini (firmly packed)
  • 1 cup brown sugar
  • 1 1/3 cup unsweetened applesauce
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2/3 cup oat flour
  • 1 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup chocolate chips or nuts (optional)
  • 1/2 cup chocolate chips (frosting)
  • 1/2 cup butterscotch chips (frosting)
  • 1/2 cup peanut butter or Nutella (frosting)

Instructions

  1. Preheat oven to 350°F and grease a 9×13 inch pan.
  2. Mix grated zucchini, brown sugar, applesauce, eggs, and vanilla until smooth.
  3. Stir in oat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt until combined.
  4. Fold in chocolate chips or nuts if using.
  5. Pour batter into prepared pan and spread evenly.
  6. Bake for 55 minutes until set and fudgy in the center.
  7. Let cool before slicing. Add melted frosting mixture or Nutella if desired.

Notes

  1. Do not overbake to keep brownies fudgy and moist.
  2. Do not squeeze all moisture from zucchini, as it helps texture.
  3. Store in airtight container at room temperature for 2 days or refrigerate up to 5 days.
  4. Flavor improves after resting overnight.
