- 2/3 cup oat flour

- 1 1/2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup chocolate chips or nuts (optional)
- 1/2 cup chocolate chips (frosting)
- 1/2 cup butterscotch chips (frosting)
- 1/2 cup peanut butter or Nutella (frosting)
Instructions
- Preheat oven to 350°F and grease a 9×13 inch pan.
- Mix grated zucchini, brown sugar, applesauce, eggs, and vanilla until smooth.
- Stir in oat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt until combined.
- Fold in chocolate chips or nuts if using.
- Pour batter into prepared pan and spread evenly.
- Bake for 55 minutes until set and fudgy in the center.
- Let cool before slicing. Add melted frosting mixture or Nutella if desired.
Notes
- Do not overbake to keep brownies fudgy and moist.
- Do not squeeze all moisture from zucchini, as it helps texture.
