Description

Fresh peach dessert bars made with a buttery oat crumb crust, ripe summer peaches, brown sugar, cinnamon, and vanilla. These easy bars are perfect for gatherings, snacks, and simple summer baking.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup rolled oats
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 cups fresh peaches, peeled and diced, about 3 to 4 medium peaches
  • Optional: 1 to 2 tablespoons granulated sugar for peaches, if needed
  • Optional: chopped nuts or shredded coconut for topping

Instructions

  1. Preheat the oven to 350°F. Grease a 9×9-inch baking dish and set it aside.
  2. In a large bowl, combine the flour, granulated sugar, brown sugar, rolled oats, baking powder, salt, and cinnamon.
  3. Add the softened butter and vanilla extract. Mix until the mixture forms coarse crumbs.
  4. Reserve about 1 cup of the crumb mixture for the topping.
  5. Press the remaining crumb mixture evenly and firmly into the bottom of the prepared baking dish.
  6. In a separate bowl, toss the diced peaches with a little sugar if desired.
  7. Spread the peaches evenly over the crust.
  8. Sprinkle the reserved crumb mixture over the peaches.
  9. Bake for 30 to 35 minutes, or until the top turns golden brown and the peach filling bubbles lightly around the edges.
  10. Cool the bars in the pan for at least 10 minutes before slicing into 9 squares.
  11. Serve warm, at room temperature, or chilled.

Notes

  1. Use ripe, juicy peaches for the best flavor.
  2. For extra crunch, add chopped pecans, walnuts, or shredded coconut to the crumb topping.
  3. Let the bars cool longer for cleaner slices.
  4. Store leftovers in an airtight container in the refrigerator for 4 to 5 days.
  5. Freeze cooled bars for up to 2 months and thaw overnight in the refrigerator.
