Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup rolled oats
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 cups fresh peaches, peeled and diced, about 3 to 4 medium peaches
- Optional: 1 to 2 tablespoons granulated sugar for peaches, if needed
- Optional: chopped nuts or shredded coconut for topping
Instructions
- Preheat the oven to 350°F. Grease a 9×9-inch baking dish and set it aside.
- In a large bowl, combine the flour, granulated sugar, brown sugar, rolled oats, baking powder, salt, and cinnamon.
- Add the softened butter and vanilla extract. Mix until the mixture forms coarse crumbs.
- Reserve about 1 cup of the crumb mixture for the topping.
- Press the remaining crumb mixture evenly and firmly into the bottom of the prepared baking dish.
- In a separate bowl, toss the diced peaches with a little sugar if desired.
- Spread the peaches evenly over the crust.
- Sprinkle the reserved crumb mixture over the peaches.
- Bake for 30 to 35 minutes, or until the top turns golden brown and the peach filling bubbles lightly around the edges.
- Cool the bars in the pan for at least 10 minutes before slicing into 9 squares.
- Serve warm, at room temperature, or chilled.
Notes
- Use ripe, juicy peaches for the best flavor.
- For extra crunch, add chopped pecans, walnuts, or shredded coconut to the crumb topping.
- Let the bars cool longer for cleaner slices.
- Store leftovers in an airtight container in the refrigerator for 4 to 5 days.
- Freeze cooled bars for up to 2 months and thaw overnight in the refrigerator.
