Description

Hobo Casserole is a hearty, budget-friendly baked dish made with ground beef, thinly sliced potatoes, creamy mushroom soup, and melted cheddar cheese. Easy to customize with vegetables and seasonings, this comfort food classic is perfect for busy weeknights and family dinners.


Ingredients

  • 500g ground beef

  • 4 medium potatoes, thinly sliced

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 250g cheddar cheese, shredded

  • 1 can (approx. 10.5 oz) cream of mushroom soup

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • Optional vegetables: peas, carrots, green beans


Instructions

  1. Preheat oven to 180°C (350°F).

  2. In a skillet, heat olive oil and brown the ground beef. Drain excess fat and set aside.

  3. Sauté chopped onion and minced garlic in the same pan until softened.

  4. In a bowl, mix cream of mushroom soup with a splash of water to thin it slightly.

  5. Slice potatoes thinly using a knife or mandoline.

  6. In a greased casserole dish, layer as follows: ground beef, sautéed onions and garlic, potato slices.

  7. Pour the soup mixture over the layers.

  8. Cover with foil and bake for 45 minutes.

  9. Remove foil, sprinkle shredded cheddar cheese on top, and bake uncovered for 10–15 more minutes until cheese is melted and bubbly.

  10. Let rest a few minutes before serving.

Notes

Slice potatoes thinly to ensure even cooking.

Add breadcrumbs or extra cheese on top for a crispy finish.

Substitute ground turkey or plant-based meat for variations.

Add paprika, Italian seasoning, or chili flakes for extra flavor.
