- 1 1/2 cups sushi rice
- 2 1/4 cups water
- 2 tablespoons seasoned rice vinegar
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 avocado
- 1/2 English cucumber
- 8 ounces imitation crab
- 4 sheets toasted nori seaweed
Instructions
- Rinse the sushi rice in a colander until the water runs mostly clear.
- Add the rice and water to a pot, bring to a boil, then cover and simmer on low for 15 minutes.
- Mix rice vinegar, sugar, and salt until dissolved.
- Transfer cooked rice to a sheet pan, drizzle with vinegar mixture, toss gently, and spread to cool for 10 minutes.
- Thinly slice the avocado and cut the cucumber into long thin strips after removing the seeds.
- Place a sheet of nori shiny side down on a sushi mat.
- Spread 1 cup of rice evenly over the nori, leaving 1 inch uncovered at the top.
- Add a line of avocado, imitation crab, and cucumber.
- Roll tightly using the mat to form a log.
- Slice each roll into 8 pieces with a serrated knife.
Notes
- Keep your hands slightly wet to prevent the rice from sticking.
- Do not overfill the rolls to avoid tearing the nori.
- Serve immediately for best texture and flavor.
