Description

Flaky, buttery homemade chocolate croissants filled with rich melted chocolate.


Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter
  • 2 tbsp all-purpose flour
  • 16 chocolate batons
  • 1 large egg
  • 1 tbsp milk

Instructions

  1. Mix dough ingredients and chill
  2. Prepare butter slab and chill
  3. Encase butter in dough
  4. Roll and fold dough three times with chilling
  5. Chill dough overnight
  6. Roll, cut, fill, and shape croissants
  7. Proof croissants
  8. Egg wash and bake until golden
