Description

Flaky, layered cronuts made from laminated pastry dough, fried until golden, glazed, and optionally filled with whipped cream and strawberries.


Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 tablespoon salt
  • 1/4 cup granulated sugar
  • 4 1/2 teaspoons instant dry yeast
  • 1 cup warm water
  • 1 large egg white
  • 8 tablespoons unsalted butter, softened
  • 1 tablespoon heavy cream
  • 1 cup unsalted butter, softened
  • 4 cups vegetable oil
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons cold water
  • 1 cup sliced strawberries
  • 2 cups whipped cream

Instructions

  1. Mix dough ingredients until smooth and let rise until doubled
  2. Shape dough into a square and refrigerate overnight with butter block
  3. Laminate dough by rolling, folding, and chilling again overnight
  4. Roll dough, cut cronuts, and let rise for 2 hours
  5. Fry cronuts at 350°F until golden and drain
  6. Glaze while warm and fill once cooled
