Description
Honey BBQ Chicken Rice is a comforting, easy weeknight meal made with tender chicken, fluffy rice, and a sweet smoky honey barbecue sauce that brings everything together in one satisfying bowl.
Ingredients
Scale
- 1 1/2 pounds boneless skinless chicken breast or thighs
- 1 1/2 cups long-grain white rice
- 3 cups chicken broth or water
- 3/4 cup barbecue sauce
- 1/3 cup honey
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup diced bell peppers (optional)
- 1/2 cup chopped yellow onion (optional)
- Sliced green onions for garnish
Instructions
- Rinse the rice under cold water until the water runs clear, then cook it in chicken broth according to package directions and set aside.
- Heat olive oil in a large skillet over medium heat.
- Season the chicken evenly with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Cook the chicken in the skillet until golden on the outside and fully cooked through.
- In a small bowl, mix the barbecue sauce and honey until smooth.
- Pour the honey BBQ sauce over the chicken and simmer gently until the sauce thickens and coats the chicken.
- Add the cooked rice to the skillet and stir gently until evenly combined with the sauce.
- Fold in bell peppers and onion if using, then cook for a few minutes until everything is heated through.
- Remove from heat and garnish with sliced green onions before serving.
Notes
- Rinsing the rice helps prevent a mushy texture.
- Chicken thighs will produce a juicier result, while chicken breast is leaner.
- Leftovers store well and taste even better the next day.
