Ingredients
For the crust:
1 ½ cups graham cracker crumbs (150 g)
¼ cup granulated sugar (50 g)
6 tbsp melted butter (85 g)
For the filling:
3 packages cream cheese, softened (675 g)
¾ cup granulated sugar (150 g)
3 large eggs
1 cup sour cream (240 g)
1 tbsp vanilla extract (15 ml)
2 tbsp honey (30 ml)
1 tsp ground cinnamon
Pinch of salt
Optional Topping (after baking):
Honey drizzle
Cinnamon glaze (powdered sugar + milk + cinnamon)
Whipped cream or powdered sugar
Instructions
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the base in foil for a water bath.
Make the crust: Mix graham crumbs, sugar, and melted butter. Press into pan base and bake for 10 minutes. Let cool.
Prepare filling: Beat cream cheese until smooth. Add sugar, then mix in eggs one at a time. Stir in sour cream, vanilla, honey, cinnamon, and salt.
Assemble: Pour filling over the cooled crust. Smooth top.
Bake: Place pan in a water bath and bake 50–60 minutes. The center should jiggle slightly.
Cool and chill: Let cool at room temp for 1 hour, then refrigerate for at least 4 hours or overnight.
Serve: Top with a drizzle of honey, cinnamon glaze, or whipped cream. Slice and enjoy!
