Instructions
- Preheat oven to 400°F and grease a mini muffin tin or silicone molds.
- Whisk cornmeal, flour, sugar, baking powder, and salt in a large bowl.
- Whisk buttermilk, vegetable oil, and egg in a separate bowl.
- Stir wet ingredients into dry ingredients until just combined.
- Fill muffin cups three-quarters full with batter.
- Bake for 10 to 12 minutes until golden and a toothpick comes out clean.
- Whisk melted butter, honey, and salt together.
- Brush warm poppers generously with honey butter glaze and serve warm.
