Ingredients
2 boneless, skinless chicken breasts or thighs
2 tablespoons honey
2 chipotle peppers in adobo sauce, chopped
2 tablespoons lime juice
1 teaspoon garlic powder
1 teaspoon cumin
2 tablespoons olive oil
Salt and black pepper, to taste
1 cup cooked rice (white, brown) or quinoa
Toppings:
1 avocado, sliced
1/2 cup corn salsa
Fresh cilantro, chopped
Lime wedges
1/4 cup queso fresco or cotija cheese, crumbled
Optional Extras:
1/2 cup black beans
1/4 cup pickled onions
1/2 cup diced tomatoes
1–2 jalapeños, sliced
Instructions
Make the Marinade: In a bowl, mix honey, chipotle peppers, lime juice, garlic powder, cumin, olive oil, salt, and pepper.
Marinate the Chicken: Coat the chicken in the marinade. Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
Cook the Chicken:
Grill: Heat grill to medium-high and cook chicken for 5-6 minutes per side, reaching an internal temperature of 165°F (75°C).
Skillet: Heat oil in a skillet and cook chicken over medium heat, flipping once after 5-6 minutes.
Air Fryer: Preheat air fryer to 400°F (200°C) and cook chicken for 15 minutes, flipping halfway through.
Rest and Slice: Let the chicken rest for 5-10 minutes, then slice or chop into bite-sized pieces.
Assemble the Bowl:
Layer grains in a bowl, add chicken, and top with corn salsa, avocado, cilantro, lime wedges, and crumbled cheese.
Add optional extras like black beans, pickled onions, tomatoes, and jalapeños.
Notes
You can substitute chicken with tofu, shrimp, or steak.
For a lighter version, use cauliflower rice instead of regular grains.
Adjust the spice level by adding or reducing chipotle peppers and chili flakes.
