Ingredients

- 1 pound boneless chicken thighs
- 1/4 cup honey
- 2 tablespoons fresh lime juice
- 1 teaspoon salt
- 1 cup uncooked rice
- 1/4 cup chopped cilantro
- 1 large avocado
- 1/2 cup cherry tomatoes
- 1 cup tortilla chips (optional)
Instructions
- Whisk honey, lime juice, and salt in a bowl
- Add chicken and marinate for 30 minutes
- Cook rice according to package instructions
- Fluff rice and stir in cilantro and lime juice
- Cook marinated chicken until done, about 20 minutes
- Rest chicken briefly, then slice
- Layer rice, avocado, and chicken in bowls
- Top with cherry tomatoes and serve
