Description

A cozy Honey Pear Jam made with ripe pears, honey, vanilla bean, cinnamon, lemon juice, and Pomona’s Universal Pectin for a lower-sugar water bath canning recipe.


Ingredients

  • 4 cups ripe pears, peeled, cored, and finely chopped
  • 1/4 cup bottled lemon juice
  • 1 cinnamon stick
  • 1 vanilla bean, split and seeds scraped
  • 1/2 cup water
  • 4 teaspoons calcium water, prepared from the Pomona’s Universal Pectin box
  • 1/2 cup honey
  • 3 teaspoons Pomona’s Universal Pectin

Instructions

  1. Prepare calcium water according to the Pomona’s Universal Pectin package directions.
  2. Wash jars, lids, and bands, then keep jars hot in a water bath canner.
  3. Add chopped pears, bottled lemon juice, cinnamon stick, vanilla bean seeds, vanilla pod, water, and calcium water to a wide saucepan.
  4. Stir Pomona’s pectin into the honey in a separate bowl until smooth.
  5. Bring the pear mixture to a full boil over medium-high heat, stirring often.
  6. Mash the pears lightly if a smoother jam texture is desired.
  7. Remove the cinnamon stick and vanilla pod.
  8. Add the honey-pectin mixture and stir constantly for 1 to 2 minutes while keeping the jam at a strong boil.
  9. Ladle hot jam into hot jars, leaving 1/4 inch headspace.
  10. Wipe jar rims, apply lids and bands, and process in a boiling water bath for 10 minutes.
  11. Turn off heat, let jars rest in the canner for 5 minutes, then transfer jars to a towel-lined counter.
  12. Cool jars for 12 to 24 hours, check seals, label, and store sealed jars in a cool, dark place.

Notes

  1. Use Pomona’s Universal Pectin only; do not swap pectins.
  2. Use bottled lemon juice for steady acidity in canning.
  3. Choose ripe pears that give slightly when pressed.
  4. Refrigerate any jar that does not seal properly.
  5. Opened jars should be refrigerated and used within about 3 weeks.
