- 1 ½ cups cream cheese
- ½ cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup unsalted pistachios, chopped
- 10 sheets phyllo dough
- ½ cup melted butter
- ½ cup honey
- ½ cup water
- 1 tsp lemon juice
Instructions
- Prepare Cheesecake: Preheat oven to 320°F (160°C). In a bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla extract. Pour into a springform pan and bake for 45 minutes, until set. Let cool.
- Create Baklava Layers: Brush phyllo dough with melted butter, layering 5 sheets in a baking tray. Add chopped pistachios and repeat the process with the remaining 5 sheets. Bake at 350°F (180°C) for 20 minutes, until golden.
- Make Honey Syrup: Combine honey, water, and lemon juice in a saucepan. Simmer for 10 minutes, then pour over the warm baklava.
- Assemble: Place the baked baklava on top of the cooled cheesecake. Allow everything to cool and set before serving.
