Honey Roasted Rainbow Carrots with Burrata and Pomegranate — a stunning side dish perfect for any dinner party. Sweet caramelized carrots meet creamy burrata and fresh pomegranate for a vibrant and elegant flavor combination.
Ingredients
2 pounds rainbow carrots, peeled
2 tablespoons butter
2 tablespoons honey (orange blossom if possible)
1/8 teaspoon ground cinnamon
Salt and pepper, to taste
Burrata cheese, pinched into small pieces
1 pomegranate, arils removed
Instructions
Preheat the oven to 400°F.
Melt the butter and stir in the honey and cinnamon.
Toss the carrots in the honey-butter mixture and season with salt and pepper.
Spread in a single layer on a baking sheet and roast for 15 minutes.
Flip the carrots and roast for another 15–20 minutes until tender and caramelized.
Transfer to a serving platter and top with burrata pieces.
Sprinkle pomegranate arils on top and serve warm.
Notes
Use orange blossom honey for extra floral notes.
Add a drizzle of balsamic reduction before serving for a gourmet touch.
To make vegan, substitute olive oil for butter and skip the burrata.
