Description

Honey Roasted Rainbow Carrots with Burrata and Pomegranate — a stunning side dish perfect for any dinner party. Sweet caramelized carrots meet creamy burrata and fresh pomegranate for a vibrant and elegant flavor combination.


Ingredients

  • 2 pounds rainbow carrots, peeled

  • 2 tablespoons butter

  • 2 tablespoons honey (orange blossom if possible)

  • 1/8 teaspoon ground cinnamon

  • Salt and pepper, to taste

  • Burrata cheese, pinched into small pieces

  • 1 pomegranate, arils removed


Instructions

  • Preheat the oven to 400°F.

  • Melt the butter and stir in the honey and cinnamon.

  • Toss the carrots in the honey-butter mixture and season with salt and pepper.

  • Spread in a single layer on a baking sheet and roast for 15 minutes.

  • Flip the carrots and roast for another 15–20 minutes until tender and caramelized.

  • Transfer to a serving platter and top with burrata pieces.

  • Sprinkle pomegranate arils on top and serve warm.

Notes

Use orange blossom honey for extra floral notes.

Add a drizzle of balsamic reduction before serving for a gourmet touch.

To make vegan, substitute olive oil for butter and skip the burrata.
