Description
Hot Honey BBQ Quesadillas made with seasoned chicken, melted cheese, BBQ sauce, and hot honey for a sweet and spicy griddle meal.
Ingredients

- Cooking oil of choice
- 1 pound boneless skinless chicken thighs or chicken breasts
- Kosher salt
- Black pepper
- BBQ seasoning blend
- 3 tablespoons BBQ sauce
- 2 tablespoons hot honey
- 4 large burrito size flour tortillas
- 3 cups shredded cheese
- 1/2 cup chopped cilantro optional
- Sour cream optional
- Jalapeños optional
Instructions
- Preheat griddle to medium heat
- Add oil and cook chicken with salt pepper and BBQ seasoning for 6 minutes while mixing
- Add BBQ sauce and hot honey and cook 2 more minutes while mixing
- Remove chicken and clean griddle then reduce heat to medium low
- Add oil and place tortillas flat on griddle
- Add cheese to one side of each tortilla
- Add cooked chicken and drizzle extra BBQ sauce and hot honey
- Add cilantro if desired and top with more cheese
- Fold tortillas over and cook 1 to 2 minutes per side until crisp and cheese melts
- Remove from griddle and serve with sour cream and jalapeños
Notes
- Use chicken thighs for juicier results
- Do not add too much sauce to avoid soggy tortillas
- Cook on medium low heat for best crisp texture
