- 2 pounds boneless, skinless chicken thighs or breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 1 green onion, chopped
- Cooked white rice
- Grilled pineapple slices
Instructions
- Whisk pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, sesame oil, and black pepper together
- Place chicken in a bag or dish and pour half of the marinade over it
- Refrigerate for at least 1 hour or overnight
- Preheat grill to medium-high heat
- Remove chicken from marinade and discard used liquid
- Grill chicken for 6–7 minutes per side
- Baste with reserved marinade while cooking
- Cook until internal temperature reaches 165°F
- Rest for a few minutes before serving
Notes
- Marinate overnight for deeper flavor
- Use fresh pineapple juice for best results
- Do not cook on very high heat to avoid burning sugar
