For the Pancakes:

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup buttermilk
  • 1 egg
  • 1 tbsp melted butter

For the Smash Burgers:

  • ½ lb ground beef (80/20)
  • Salt & pepper to taste
  • 2 slices cheddar cheese
  • 1 tbsp butter (for cooking)

Toppings & Assembly:

  • 2 tbsp maple syrup (optional)
  • 1 tbsp ketchup or burger sauce
  • 2 leaves lettuce (optional)
  • 2 slices tomato (optional)

Instructions

  • Make the Pancakes – In a bowl, whisk flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk buttermilk, egg, and melted butter. Combine the wet and dry ingredients, stirring until just mixed. Cook pancakes on a greased griddle over medium heat until golden brown, flipping once. Keep warm.
  • Prepare the Smash Burgers – Heat a cast-iron skillet to high heat. Form ground beef into two loose balls. Place one on the hot pan and immediately press down with a spatula until thin. Season with salt and pepper. Cook for 2 minutes, flip, add cheese, and cook for another minute. Repeat for the second patty.
  • Assemble – Place a pancake on a plate, top with a smash burger, add toppings if desired, then place another pancake on top. Drizzle with maple syrup or add burger sauce for an extra flavor kick.
  • Serve Hot – Dig in and enjoy the ultimate combination of crispy, juicy, and fluffy goodness!
