Instructions

  • Prepare the Dough:

    • In a large bowl, mix butter and sugar until smooth.
    • Add the egg and vanilla extract, then mix until combined.
    • In another bowl, whisk together flour, baking powder, and salt.
    • Slowly add the dry ingredients to the wet mixture, pouring in milk as you mix.
    • Knead the dough until soft but not sticky. Cover and chill for 30 minutes.
  • Make the Cheesecake Filling:

    • In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
    • Transfer to a piping bag or keep in the fridge until ready to use.
  • Assemble the Cookies:

    • Roll out the chilled dough on a floured surface to 1/4-inch thickness.
    • Use a cookie cutter to cut out circles.
    • Place half the circles on a baking sheet and add a small spoonful of cheesecake filling to the center.
    • Cover with another dough circle, pressing edges to seal. Use a fork for extra security.
  • Bake the Cookies:

    • Preheat oven to 350°F (175°C).
    • Place cookies on a parchment-lined baking sheet, leaving space between them.
