Description

Italian Zucchini Crescent Pie is a savory, cheesy meatless pie made with tender zucchini, onions, Italian herbs, eggs, melted mozzarella or Muenster cheese, and a flaky crescent roll crust brushed with mustard.


Ingredients

  • 2 tablespoons butter
  • 4 cups thinly sliced zucchini
  • 1 cup chopped onion
  • 2 tablespoons dried parsley flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 2 large eggs, beaten
  • 2 cups shredded mozzarella or Muenster cheese
  • 1 can (8 ounces) refrigerated crescent rolls
  • 2 teaspoons yellow mustard

Instructions

  1. Preheat oven to 375°F.
  2. Melt butter in a large skillet over medium-high heat.
  3. Add sliced zucchini and chopped onion, then cook for 6 to 8 minutes, stirring occasionally, until tender.
  4. Stir in parsley flakes, salt, pepper, garlic powder, basil, and oregano.
  5. In a large bowl, mix beaten eggs and shredded cheese.
  6. Add the cooked zucchini mixture to the egg and cheese mixture, then stir gently to combine.
  7. Separate crescent dough into 8 triangles and arrange in an ungreased 10-inch pie plate.
  8. Press dough over the bottom and up the sides of the plate, firmly sealing perforations to form a crust.
  9. Spread yellow mustard evenly over the crust.
  10. Pour the zucchini and cheese mixture evenly into the crust-lined pie plate.
  11. Bake for 18 to 22 minutes, or until a knife inserted near the center comes out clean.
  12. Cover crust edges with foil during the last 10 minutes if they brown too quickly.
  13. Let pie stand for 10 minutes before slicing and serving.

Notes

  1. Use fresh herbs instead of dried herbs by tripling the amount listed.
  2. Dijon mustard may replace yellow mustard for a sharper flavor.
  3. Yellow squash can replace some or all of the zucchini.
  4. Let the pie rest before slicing so the filling sets properly.
  5. Store leftovers in an airtight container in the refrigerator for up to 4 days.
