Description

A hearty one-pot dinner made with jalapeño-seasoned pinto beans, tender rotisserie chicken, Rotel tomatoes, onion, and chicken broth. The beans simmer into a thick, savory gravy and can be cooked on the stovetop or in a slow cooker.


Ingredients

  • 5 cans jalapeño Ranch Style Beans, about 15 ounces each, undrained
  • 1 can Rotel diced tomatoes and green chiles, 10 ounces, undrained
  • 2 cups low-sodium chicken broth, plus more as needed
  • 1 medium yellow onion, finely chopped
  • 1 rotisserie chicken, skin and bones removed, meat shredded
  • Cornbread, rice, tortilla chips, or warm flour tortillas for serving, optional
  • Shredded cheddar, sour cream, cilantro, sliced jalapeños, or lime wedges for topping, optional

Instructions

  1. Remove the skin and bones from the rotisserie chicken, then shred the meat into bite-size pieces.
  2. Finely chop the onion and open the cans of beans and Rotel without draining them.
  3. Add the beans, Rotel, chicken broth, onion, and shredded chicken to a large Dutch oven or heavy pot.
  4. Stir thoroughly and bring the mixture to a gentle boil over medium-high heat.
  5. Reduce the heat to low and simmer uncovered for 60 minutes, stirring every 10 to 15 minutes.
  6. Add extra broth, water, or beer if the beans become too thick, or continue simmering if the gravy remains too thin.
  7. Taste before adding salt or pepper, then serve hot with cornbread and desired toppings.
  8. For the slow-cooker method, combine all ingredients, cover, and cook on low for 4 hours before stirring and serving.

Notes

  1. Do not drain the beans because their seasoned liquid creates the gravy.
  2. For a milder dish, replace some or all of the jalapeño beans with regular Ranch Style Beans.
  3. Taste the finished beans before adding salt because the canned ingredients and rotisserie chicken already contain seasoning.
  4. Store refrigerated leftovers in an airtight container for up to 4 days.
  5. Freeze cooled portions for up to 3 months.
