Description
Jello Roll Ups are colorful, fruity, 3-ingredient pinwheel treats made with flavored gelatin, boiling water, and mini marshmallows. They chill into a soft sheet, roll into a spiral, and slice into fun finger food for parties, playdates, lunchboxes, and kid-friendly dessert trays.

- 1/2 cup boiling water
- 1 package flavored Jello gelatin, 3 ounces, any flavor
- 1 1/2 cups fresh mini marshmallows
- Nonstick cooking spray, for the pan
Instructions
- Lightly spray an 8×8-inch baking pan with nonstick cooking spray, then spread the spray into a very thin, even layer across the bottom and sides.
- Add the boiling water and flavored gelatin to a medium microwave-safe mixing bowl.
- Whisk until the gelatin fully dissolves and the mixture looks smooth and clear.
- Add the mini marshmallows and stir until all marshmallows are coated in the gelatin mixture.
- Microwave on high for 30 seconds.
- Carefully remove the bowl from the microwave and whisk until the marshmallows fully dissolve and the mixture looks light and frothy.
- Pour the mixture into the prepared 8×8-inch pan and spread it evenly.
- Refrigerate for at least 1 hour, or until the gelatin has firmly set.
- Run a butter knife around the edges of the pan to loosen the chilled gelatin sheet.
- Carefully lift one corner and remove the sheet from the pan.
- Place the sheet on parchment paper with the fluffy marshmallow side facing up.
- Starting at one end, gently roll the gelatin sheet into a tight spiral log.
- Place the log seam side down.
- Slice into 12 pieces, each about 1/2 inch thick, using a sharp knife.
- Transfer the Jello Roll Ups to a plate and serve chilled.
Notes
- Use fresh mini marshmallows because stale marshmallows may not melt smoothly.
- Do not overspray the pan, or the finished roll ups may feel greasy.
- For a thinner marshmallow layer, use 1 to 1 1/4 cups mini marshmallows.
- If the log feels sticky while slicing, lightly spray the knife with nonstick cooking spray.
- Store leftovers in an airtight container in the refrigerator for up to 1 week.
- Place parchment paper between layers to keep the slices from sticking.
- Do not freeze, because the texture changes after thawing.
- Microwave times may vary; a 1000-watt microwave usually needs about 30 seconds.
