Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

Instructions

  1. Cook the Grains:

    • Rinse quinoa before cooking. Follow package instructions to cook quinoa or bulgur.

  3. Combine Ingredients:

    • In a large bowl, mix the cooked grains, chickpeas, cucumber, red onion, parsley, mint, feta cheese (if using), and pistachios.
