Ingredients
Dough:
- 2 cups (200g) almond flour
- 2 tbsp (28g) butter, melted
- 2 tbsp (14g) cream cheese
- 1/4 cup (48g) erythritol
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1 egg
Filling:
- 4 oz (113g) cream cheese, softened
- 1 tbsp (12g) erythritol
- 1/2 tsp vanilla extract
- 1 egg yolk
Egg Wash:
- 1 egg, beaten
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the dough: In a bowl, mix almond flour, baking powder, and erythritol. Add melted butter, cream cheese, vanilla extract, and egg. Stir until a dough forms.
- Prepare the filling: In another bowl, blend softened cream cheese, erythritol, vanilla extract, and egg yolk until smooth.
- Shape the pastries: Divide dough into 6 equal pieces. Flatten each into an oval on the baking sheet. Press the center slightly to create space for the filling.
- Add filling: Spoon the cream cheese mixture into the center of each pastry.
- Brush with egg wash for a golden finish.
- Bake for 15-20 minutes or until golden brown. Let cool before serving.
