These perfectly tart and tangy key lime pie bars are easy to make and ideal for summer.
Ingredients

- 2 cups vanilla wafer cookies, finely ground
- 5 tablespoons unsalted butter, melted
- 2 tablespoons light brown sugar
- 1 tablespoon lime zest
- 5 large egg yolks
- 22 ounces sweetened condensed milk
- 1 cup freshly squeezed lime juice
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- Preheat oven to 350°F and line pan with parchment
- Mix cookie crumbs, butter, and sugar then press into pan
- Bake crust for 13-15 minutes and cool
- Beat egg yolks and zest until thickened
- Add condensed milk and mix well
- Whisk in lime juice
- Pour filling over crust and bake 15-17 minutes
- Cool then refrigerate for 3 hours or overnight
- Whip cream with sugar until peaks form
- Spread topping and slice into bars
