Easy Lasagna Soup made in one pot with ground beef, tomatoes, broth, bowtie pasta, and classic cheese toppings.

- 1–2 tablespoons olive oil
- 1 pound ground beef
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 can diced tomatoes (15-ounce)
- 1 can tomato sauce (15-ounce)
- 1/3 cup tomato paste
- 4 cups chicken broth
- 1–2 cups water
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- Black pepper to taste
- 8 ounces bowtie pasta
- 1/2 cup ricotta cheese
- 2 ounces mozzarella cheese
- 1/4 cup Parmesan cheese
- 1/4 cup fresh parsley
Instructions
- Heat olive oil in a soup pot.
- Cook ground beef, onion, and garlic until beef is browned.
- Drain excess fat if needed.
- Add tomatoes, tomato sauce, tomato paste, broth, seasoning, salt, pepper, and pasta.
- Bring to a boil.
- Reduce heat and simmer 10-15 minutes, stirring frequently.
- Adjust consistency with water or broth.
- Serve with ricotta, mozzarella, Parmesan, and parsley.
Notes
- Use sturdy pasta shapes for best leftovers.
- Ground turkey or sausage can replace beef.
- Add broth when reheating because pasta absorbs liquid.
- Crushed tomatoes create a thicker broth.
