Description

Easy Lasagna Soup made in one pot with ground beef, tomatoes, broth, bowtie pasta, and classic cheese toppings.


Ingredients

Scale
  • 12 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (15-ounce)
  • 1 can tomato sauce (15-ounce)
  • 1/3 cup tomato paste
  • 4 cups chicken broth
  • 12 cups water
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • Black pepper to taste
  • 8 ounces bowtie pasta
  • 1/2 cup ricotta cheese
  • 2 ounces mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1/4 cup fresh parsley

Instructions

  1. Heat olive oil in a soup pot.
  2. Cook ground beef, onion, and garlic until beef is browned.
  3. Drain excess fat if needed.
  4. Add tomatoes, tomato sauce, tomato paste, broth, seasoning, salt, pepper, and pasta.
  5. Bring to a boil.
  6. Reduce heat and simmer 10-15 minutes, stirring frequently.
  7. Adjust consistency with water or broth.
  8. Serve with ricotta, mozzarella, Parmesan, and parsley.

Notes

  1. Use sturdy pasta shapes for best leftovers.
  2. Ground turkey or sausage can replace beef.
  3. Add broth when reheating because pasta absorbs liquid.
  4. Crushed tomatoes create a thicker broth.
