- 1 (20-count) frozen taquitos
- 1 (16-ounce) can refried beans
- 1 (19-ounce) can enchilada sauce
- 2 cups shredded Mexican cheese blend
- Sour cream
- Optional toppings: lettuce, tomatoes, guacamole, jalapeños, cilantro, green onions
Instructions
- Preheat oven to 400°F and grease a 9×13-inch baking dish.
- Spread refried beans evenly across the bottom.
- Arrange frozen taquitos in a single layer.
- Pour enchilada sauce evenly over the taquitos.
- Bake for 20 minutes.
- Top with shredded cheese.
- Bake another 5 minutes until cheese melts.
- Serve with sour cream and desired toppings.
Notes
- Frozen burritos may be substituted.
- Red or green enchilada sauce both work well.
- Refried beans are optional.
- Store leftovers in the refrigerator for up to 4 days.
