Description

An easy four-ingredient casserole made with frozen taquitos, enchilada sauce, refried beans, and melted cheese for a quick family dinner.


Ingredients

  • 1 (20-count) frozen taquitos
  • 1 (16-ounce) can refried beans
  • 1 (19-ounce) can enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • Sour cream
  • Optional toppings: lettuce, tomatoes, guacamole, jalapeños, cilantro, green onions

Instructions

  1. Preheat oven to 400°F and grease a 9×13-inch baking dish.
  2. Spread refried beans evenly across the bottom.
  3. Arrange frozen taquitos in a single layer.
  4. Pour enchilada sauce evenly over the taquitos.
  5. Bake for 20 minutes.
  6. Top with shredded cheese.
  7. Bake another 5 minutes until cheese melts.
  8. Serve with sour cream and desired toppings.

Notes

  1. Frozen burritos may be substituted.
  2. Red or green enchilada sauce both work well.
  3. Refried beans are optional.
  4. Store leftovers in the refrigerator for up to 4 days.
