Description

Sweet, buttery, and irresistibly nutty, these Lazy Pecan Pie Bars are a simpler take on a classic dessert. Perfect for any gathering, they pack all the flavor of pecan pie in a portable, fuss-free format!

Ingredients

Scale

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1 cup unsalted butter, softened

For the Filling:

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cups chopped pecans

Instructions

  • Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a large bowl, combine flour, sugar, and salt. Add softened butter and mix until crumbly.
    • Press the mixture evenly into a 9×13-inch baking pan lined with parchment paper.
    • Bake the crust for 12-15 minutes or until lightly golden. Let it cool slightly.
  • Make the Filling:
    • In a mixing bowl, whisk together corn syrup, sugar, eggs, melted butter, and vanilla extract until smooth.
    • Stir in chopped pecans.
  • Assemble the Bars:
    • Pour the pecan filling over the baked crust, spreading it evenly with a spatula.
  • Bake:
    • Return the pan to the oven and bake for 25-30 minutes, or until the filling is set and lightly golden on top.
    • Cool completely in the pan on a wire rack.
  • Cut and Serve:
    • Once cooled, lift the bars out of the pan using the parchment paper. Slice into squares or rectangles.

Notes

  • Cool Completely Before Cutting
Allow the bars to cool fully after baking to ensure the filling sets properly and slices cleanly without falling apart.
  • Rotate the Pan for Even Baking
Halfway through baking, rotate the pan to ensure even cooking, especially if your oven has hot spots.
  • Customize the Filling
Add chocolate chips, toffee bits, or a pinch of cinnamon for unique flavor variations. Adjust the recipe to suit your taste!
