Description

This Lemon Chicken Soup recipe features tender chicken, delicate angel hair noodles, Parmesan, and a bright citrus broth for a cozy yet healthy dinner.


Ingredients

  • 12 tablespoons olive oil
  • 1 1/4 lbs boneless skinless chicken breast
  • Lemon pepper seasoning to taste
  • 1/2 cup dry white wine
  • 2 tablespoons butter
  • 1 small yellow onion diced
  • 3/4 cup carrots diced
  • 2 sticks celery diced
  • 3 cloves garlic minced
  • 7 cups chicken broth
  • 1/2 chicken bouillon cube
  • 1 teaspoon soy sauce
  • Juice of 1 lemon (34 tablespoons)
  • 1/2 cup Parmesan cheese grated
  • 1 Parmesan cheese rind optional
  • 4 oz angel hair pasta
  • 3/4 teaspoon dried parsley
  • 3/4 teaspoon dried basil
  • 3/4 teaspoon dried oregano
  • 3/4 teaspoon mustard powder
  • 1 pinch turmeric
  • Salt and pepper to taste

Instructions

  1. Combine chicken broth, bouillon cube, soy sauce, lemon juice, parsley, basil, oregano, mustard powder, and turmeric and set aside.
  2. Slice thick chicken breasts lengthwise, pat dry, and season with lemon pepper seasoning.
  3. Heat olive oil over medium-high heat and sear chicken 3-4 minutes per side until golden. Remove and rest 10 minutes, then dice or shred.
  4. Add white wine to the pot and scrape the bottom to deglaze. Add butter, onion, carrots, celery, and garlic. Cook 5-6 minutes until softened.
  5. Pour in prepared broth mixture and add Parmesan rind if using. Bring to a boil, then reduce to a simmer.
  6. Return chicken to the pot and simmer 15-20 minutes until fully cooked and flavors concentrate.
  7. Cook angel hair pasta in salted boiling water about 4 minutes. Drain and place in serving bowls.
  8. Remove soup from heat and gradually stir in grated Parmesan. Discard rind. Season with salt and pepper if needed.
  9. Ladle soup over noodles and garnish with parsley before serving.

Notes

  1. Do not overcook the chicken during searing as it finishes cooking in the broth.
  2. Cook noodles separately to prevent them from absorbing too much broth during storage.
  3. Add extra lemon juice before serving for brighter citrus flavor if desired.
  4. Store soup and noodles separately for best texture.
