This Lemon Chicken Soup recipe features tender chicken, delicate angel hair noodles, Parmesan, and a bright citrus broth for a cozy yet healthy dinner.

- 1–2 tablespoons olive oil
- 1 1/4 lbs boneless skinless chicken breast
- Lemon pepper seasoning to taste
- 1/2 cup dry white wine
- 2 tablespoons butter
- 1 small yellow onion diced
- 3/4 cup carrots diced
- 2 sticks celery diced
- 3 cloves garlic minced
- 7 cups chicken broth
- 1/2 chicken bouillon cube
- 1 teaspoon soy sauce
- Juice of 1 lemon (3–4 tablespoons)
- 1/2 cup Parmesan cheese grated
- 1 Parmesan cheese rind optional
- 4 oz angel hair pasta
- 3/4 teaspoon dried parsley
- 3/4 teaspoon dried basil
- 3/4 teaspoon dried oregano
- 3/4 teaspoon mustard powder
- 1 pinch turmeric
- Salt and pepper to taste
Instructions
- Combine chicken broth, bouillon cube, soy sauce, lemon juice, parsley, basil, oregano, mustard powder, and turmeric and set aside.
- Slice thick chicken breasts lengthwise, pat dry, and season with lemon pepper seasoning.
- Heat olive oil over medium-high heat and sear chicken 3-4 minutes per side until golden. Remove and rest 10 minutes, then dice or shred.
- Add white wine to the pot and scrape the bottom to deglaze. Add butter, onion, carrots, celery, and garlic. Cook 5-6 minutes until softened.
- Pour in prepared broth mixture and add Parmesan rind if using. Bring to a boil, then reduce to a simmer.
- Return chicken to the pot and simmer 15-20 minutes until fully cooked and flavors concentrate.
- Cook angel hair pasta in salted boiling water about 4 minutes. Drain and place in serving bowls.
- Remove soup from heat and gradually stir in grated Parmesan. Discard rind. Season with salt and pepper if needed.
- Ladle soup over noodles and garnish with parsley before serving.
Notes
- Do not overcook the chicken during searing as it finishes cooking in the broth.
- Cook noodles separately to prevent them from absorbing too much broth during storage.
- Add extra lemon juice before serving for brighter citrus flavor if desired.
- Store soup and noodles separately for best texture.
