For the Crust and Topping:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt

For the Lemon Filling:

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  • Prepare the Crust: Preheat your oven to 350°F (175°C). In a large bowl, mix flour, sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup of the mixture for topping. Press the remaining mixture into the bottom of an 8×8-inch baking pan lined with parchment paper. Bake for 12-15 minutes until lightly golden.
  • Make the Filling: In another bowl, whisk together eggs, sugar, flour, lemon juice, and lemon zest until smooth.
  • Assemble the Bars: Pour the lemon mixture evenly over the baked crust. Sprinkle the reserved crumb mixture on top.
  • Bake Again: Bake for an additional 20-25 minutes or until the filling is set and the top is lightly golden.
  • Cool and Serve: Let the bars cool completely, then chill in the refrigerator for at least 1 hour. Slice into squares and dust with powdered sugar before serving.

Notes

1️⃣ Use Fresh Lemons: Always opt for fresh lemon juice and zest for the best flavor. Bottled juice can’t match the vibrant, tangy taste of fresh lemons.

2️⃣ Chill Before Cutting: Allow the bars to cool completely and chill in the fridge for at least 1 hour. This ensures clean, neat slices and a firm texture.

3️⃣ Don’t Overbake the Crust: Bake the crust until it’s just lightly golden. Overbaking can make it too hard and lose the perfect crumbly texture.
