Description

Soft sugar cookie cups filled with creamy homemade lemon curd, perfect for parties and bite-sized desserts.


Ingredients

  • 1 cup butter, room temperature
  • 2 cups sugar
  • 2 tablespoons lemon zest
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 cups all-purpose flour
  • 1 cup lemon juice
  • 3 egg yolks
  • 1 cup sugar
  • 1.5 tablespoons cornstarch
  • 2 tablespoons lemon zest
  • 1/4 cup butter

Instructions

  1. Preheat oven to 350°F.
  2. Cream butter, sugar, and lemon zest until light and fluffy.
  3. Add eggs one at a time, then mix in vanilla and salt.
  4. Whisk dry ingredients and combine with wet mixture.
  5. Form dough balls and press into mini muffin tin to create cups.
  6. Bake for 7–8 minutes until lightly golden.
  7. Cool completely before filling.
  8. Blend lemon curd ingredients until smooth.
  9. Cook mixture over medium heat, stirring constantly until thickened.
  10. Remove from heat and whisk in butter.
  11. Fill each cookie cup with lemon curd and chill before serving.
